Hi could I have a private post please?

I’m looking at changing my sons surname. Does anyone have any experience in what I’d need to do and the best way to go about it?
I’ve looked into doing it by deedpoll but there’s also something called a statutory declaration, would I need to have both?
Father is not on birth certificate and has no contact so would I need his permission?
Also will the passport office accept the name change when applying for the first passport?
